MEXICO IN YOUR KITCHEN
Mazatlán is the shrimp capital of Mexico and one of its famous recipes with this tasty crustacean is the Aguachile de Camarón (Shrimp in Lemon-Chili Juice).
Ingredients:
2 pounds medium shrimp
1 cucumber
1/2 red onion
8 limes
4 green chili
Directions:
1. Peel and remove all of the shrimp shell, devein the shrimp by removing the black vein and cut them butterfly style.
2. Place the shrimp in a flat dish and cover with thin slices of the red onion, slices of the cucumber and the chili in strips. Add salt and pepper to taste.
3. Squeeze the lime juice over the shrimp and place in the refrigerator for 1 hour.
Serve with tostadas (crunchy fried tortillas).
