Huachinango a la Talla
Acapulco is very well-known for its gourmet cuisine, based specially on seafood. One of the most popular being “Huachinango,” which can be prepared in many different ways.
This month we present “Huachinango a la Talla.”
Ingredients:
1 red snapper (huachinango)
12 corn tortillas
4 peeled seedless tomatoes
1/2 onion
1 head of garlic
3 guajillo chilies without seeds
1/2 cup of mayonnaise
Salt to taste
Directions:
Dip tortillas into boiling oil.
Prepare a sauce in the blender by mixing the tomatoes, onion, guajillo chilies and the mayonnaise.
Season the fish with salt, cover the fish with the sauce inside and out, then cover it with tortillas and wrap in tinfoil.
Heat in oven for about 25 minutes at 392F.
Serve with french fries and rice.
